Kimchi is something I have frequently mentioned and I would like to clarify for those who think it is just a smelly cabbage dish, exactly what Kimchi is.
I follow this really interesting site, 'Mark's Daily Apple' and there is an entire article dedicated to the making of Kimchi today. I am hoping in a couple of months time I can join one of my old co-workers making kimchi old style with her family. It is a mass production for the winter and it is called 'Kimjang' a kimchi making event.
