Easy like a Sunday Pancake Morning

There's something about Shrove Tuesday that makes me feel excited about the year ahead. It picks you up again after the hopeful thoughts about new year have worn off. It's the feeling that spring is coming; determination to achieve those pesky resolutions has waivered and it's a day to get back on it! Lent builds anticipation for a final reward! 
This weekend, my bridesmaid Hannah and I, set to and made the first strokes of writing on my gorgeous, hand designed wedding invites for the summer (courtesy of the darling Miss Webber and incredibly clever Mrs Milligan- fellow bridesmaids). The excitement of this and the fun times ahead are something else to look forward to and undergo a period of lean!! 
So with an excited heart, I pulled down the mixing bowl and made some amazing breakfast pancakes for a final treat, following whispers of inspiration from Hannah. Neither of us had a moment to make pancakes on Tuesday itself and after four hours of laborious envelope licking the night before, I thought I owed her.

I took the recipe from New York; Cult Recipes by Marc Grossman.

Makes 25 

New York Fluffy Pancakes

150g plain flour
1 teaspoon bakin powder
1 teaspoon caster sugar
Pinch salt

Sift these ingredients into a bowl. In a seperate bowl, mix the wet ingredients as follows:

250ml milk
2 beaten eggs
25g melted butter
Drop vanilla extract

Pour the liquid ingredients into the dry whisking a little at a time. Don't over mix or a tough texture will result.

Heat your pan with a little oil, test the heat with a little dribble of batter. Pour in a tablespoon at a time and cook until the shape solidifies and air bubbles appear- turn and cook the other side until golden. Cook for around 30 secs each side.

Serve with crispy streaky bacon, maple syrup and banana.
